Origin of milk: Italy. This cheese is suitable for those following a vegetarian diet and is characterized by its high digestibility, given by the goat’s milk used. It has a yellow rind and a white and soft paste. Delicate and sweet taste.
Ingredients: Romagna goat’s milk, sea salt, vegetal rennet. The rennet used is extracted from the flower of the wild thistle, of Cynara kind, which contains the suitable enzymes for the realization of this cheese. It has a semi-hard, white paste without eyes (not always available).
Storage and expiry date: Shelf life 60 days. To ensure the integrity of the product, the cheese must be stored at refrigeration temperature (4-6° C), without interrupting the cold chain, in a protective casing, in the fridge between 0-4°.
