The Tufello di Romagna is a mixed goat cheese aged in the tuff fossas in Sogliano al Rubicone. It’s an easily digestible product, ideal for people who are sheep and cow’s milk intolerant. It’s a semi-hard cheese, it has no rind and its colour is pale yellow. The Tufello di Romagna has an irregular shape and can weigh from 900 g. to 1200 g. It is aged and subsequently placed in the tuff fossas in Sogliano al Rubicone for 3 months. Combinations: honey, the Savòr and a few drops of saba are special to combine with this product, all accompanied with a glass of Albana Passita. Storage: in a cool, dry place or in the refrigerator at 4 degrees.
Ingredients: Pasteurized cow’s and goat milk, lactic enzymes, rennet, salt. Shelf life 1 year.
