Ripe Cheeses “Sapori del Rubicone”

“Sapori del Rubicone” is a line of ripened and refined caciotta cheeses whose main characteristics are being produced locally, an artisan care and the use of natural and local quality ingredients.
Undoubtedly, the most famous of this line of cheeses is the Formaggio di Fossa Dop that we produce in the factory and then age in tuff caves.
The refined pecorino are natural and are not coated with a rind of wax or other compounds that are often used to ensure aesthetic perfection. The line with vegetal rennet is now also strongly characterized as an expression of our territory.
